Spinach and Bacon Frittata


Someone is sick.  It's not me.  But now that I just said that and jinxed myself...

Gary is sick.  :-(

He started feeling under the weather sometime yesterday. It's probably a cold. He went and saw the doctor this morning and he's on an antibiotic.  Hopefully this will be a fast duration!  His throat is really sore and his ears hurt. Poor guy. Don't you hate when men get sick?  I am staying as far away as I can!

Tonight I am actually hanging out with my BFF. {I feel like a teenager anytime I use the phrase 'BFF'}.  hehe.  So I am glad to get out of the house for a couple hours!  Before I leave, I might whip up some of Gary's favorite brownies!  Although, he said he didn't have much of an appetite.

This morning I had a decent workout at the gym.  It's day two in a row of me going there again. I still hate the fact that I am losing consistency with the gym.  I hope to keep going at least 4 more days in a row and then maybe take one rest day.  I feel better after I go; so for now, that's the only incentive to keep me going. Why can't working out be as simple as...eating?!

Real quick...I wanted to share my favorite cereal with you!  This was breakfast.

 I am obsessed with this granola cereal!  You have got to try it!



So, when your significant other is down for the count, you know what you do?  You bake and cook a lot!  Well, and on snow days. Today, I had this urge to make a dish that I have never made before.  And I also wanted to have something on hand for a late night snack!  Something healthy this time around , instead of say cookies or ice cream.  I rarely eat bad stuff late at night, but still. If I made cookies and it's midnight and I am famished or just have a sweet tooth, you better believe I am going to eat of a cookie.  Or two.

I give you...the Frittata!







I don't know why I always felt a little intimidated to make this!  I am crazy..because it was super simple and soooooo good!

I chose the spinach because I had a huge bag of it and wanted to utilize most of it.  And the bacon?  Well, bacon jut makes perfect sense, doesn't it?  This was seriously so delicious and I have no idea why I have never made this before!  Serve for breakfast or brunch...or dinner...and of course, that midnight snack!  This meal works well at any time!


Spinach and Bacon Frittata

I changed up my ingredients , but that was all. This recipe rocked!

Ingredients:

1 T. olive oil
About 2 cups of spinach leaves (they shrink up fast once heated, so you'll want a good amount)
1/2 cup Parmesan cheese
8 large eggs
salt
black pepper
4 slices of bacon (I like apple-wood smoked bacon)
5 slices of Kraft Yellow American cheese



I used the Kraft cheese for one reason:  ever since I was little and when I ate an omelet, whether my mom made me one or out at a diner, I loved this kind of cheese with my eggs!  It melts beautifully and it just has that childhood sentiment for me.  Surely you can use any cheese you like.  Shredded cheddar would work best most likely; or a shredded mozzarella. Mmmmm.

Heat your oven to 425 degrees and get cookin'!

I start with getting the bacon cooked through and a bit crispy.

Heat some oil in a small frying pan and let the bacon cook up.

I like to roll up the bacon and slice it that way. Much easier.




You are going to have a few longer strips with the bacon and some fatty pieces.  Just leave it be and no worries.  Bacon is bacon.

Whisk your eggs!  Crack open 8 eggs in a medium mixing bowl, add your Parmesan cheese, and a little salt and pepper. 






Place your spinach in a larger, hot frying pan.



Cut the cheese! :-)




Once your bacon is pretty well heated through and a bit crispy, add to the spinach and then add the egg mixture. Spread everything around and then add your cheese.





Once the edges set, pop in the oven in the same frying pan for 10-12 minutes until the eggs look cooked through and the frittata will puff up a bit.



This was the gorgeous result!


This was insanely good! I also must say that the Parmesan cheese MAKES this dish.  It's so distinct but has such a divine taste!  Please make this...for any time of the day!  And I should say, for my first time making this dish, it turned out perfectly!  {pats herself on back}.
